She demonstrates how to make a warm, lemony feta pasta salad with radishes and asparagus; swiss chard rolls stuffed with rice and beans; and roasted carrots and beets with yogurt, herbs, and pistachios. Fallon Bader, Registered Dietitian Nutritionist (RDN), completed her bachelor’s in nutrition at Penn State University, dietetic internship at Cornell University, and master’s in health education at UNM. She loves to show people how to use seasonal produce in tasty, accessible, and easy ways.
